Ketogenic Recipe: Strawberry Cheesecake Fat Bomb

Ingredients:
½ cup strawberries, washed and trimmed
2 Tbsp. powdered erythritol or 10-15 drops liquid stevia
1 tsp. vanilla extract
¾ cup cream cheese, softened
¼ cup butter, softened

Directions:
1. Place strawberries in a bowl and mash with the back of a fork, until smooth. Add the erythritol/stevia and vanilla extract and stir to mix.
2. Place the cream cheese and butter into a mixing bowl and beat with an electric mixer. Mix in the strawberry mixture until combined. Spoon into 12 small muffin molds and place in the freezer for about 2 hours.

Makes 12 (1 gm carb/bomb) or 24 (0.5 gm/ bomb)

Servings: 2-3

Ingredients:

Chicken:
Butcherbox Chicken Thighs OR breast, Skinless and boneless, 1 lbs diced (https://bit.ly/36HwjxL)
2 eggs whisked
1/2 cup protein powder (I used this one: https://amzn.to/30TZYQM)
1/2 tsp salt
1/2 tsp pepper
¼ tsp ground ginger

Orange Chicken Sauce:
3/4 cup sweetener (I used this one: https://amzn.to/3gSvggA)
**PLEASE NOTE: If you are using monkfruit, erythritol, or confectioners, HALF the sweetener first, taste it and then adjust to your liking**
4 tbsp white vinegar
3 tbsp soy sauce
¼ – 1/2 tsp sesame oil (if you love sesame oil, use 1/2!)
¼ cup water
¼ tsp ground ginger
½ tsp garlic or 2 garlic cloves
½ tsp red pepper flakes
1 tsp orange zest

For frying:
1/2 cup olive oil (we are shallow frying so we will NOT be using all of this)

-10 ounces of coffee (light roast preferred)

KETO CHICKEN TAQUITOS RECIPE

3 cups rotisserie chicken
8 ounces cream cheese, softened
1 -2 cups chopped spinach
2 cups shredded cheese
⅓ cup sour cream
¼ cup salsa
Low carb tortillas or coconut wraps
Avocado oil for frying

Mix ingredients together. Roll with a tortilla or coconut wrap and fry in hot avocado oil until browned. Remove from pan and place on paper towel to dry.
